Crisp, dry Sauvignon Blanc from Touraine with lively grapefruit and citrus flavours and a white peppery finish. The grapes were crushed and underwent a 36-hour débourbage or settling, before being traditionally vinified at cool temperatures in stainless steel tanks. Fermentation took place with wild yeasts. The wine was aged on its fine lees for four months imparting texture and complexity before being bottled. This cuvée was made in an unoaked style to express the purity of fruit and the nuances of the terroir. A charming, dry Sauvignon Blanc from Touraine, crisp with lively herbaceous and citrus flavours, a good weight on the palate and a clean, fresh finish with a hint of minerality.
